Cheese Gnocchi

Some evenings you just don’t want to cook, you’ve had a long day and you just want to relax and put your feet up rather than slaving over a hot stove.  It’s on evenings like this, that you want a tasty but quick and simple dish, allowing you to sit back and enjoy your supper and a little glass of something.

This recipe is a must, it is so creamy and delicious and even good enough to serve to friends – the ideal kitchen supper and it only takes 15 minutes.

BLUE CHEESE GNOCCHI

Serves 3 / 4

INGREDIENTS

500g fresh gnocchi
4 rashers smoked streaky bacon, chopped
handful of chestnut mushrooms, sliced
250g baby spinach
100ml creme fraiche
4 tbsp parmesan, grated
100g soft blue cheese

METHOD

Fry the streaky bacon in a frying pan with a little olive oil until it starts to crisp then add the mushrooms and a little butter and fry until soft.

Meanwhile boil a large pan of water and when up to temperature add the gnocchi and cook as per pack instructions. Add the spinach for the last 30 seconds and then drain both the gnocchi and spinach and leave in the colander.

Add the creme fraiche, parmesan, bacon, mushrooms, gnocchi and spinach to an ovenproof dish and stir. Crumble the blue cheese on top and add some black pepper.

Put the dish under a hot grill until the cheese is bubbling and then serve with a crisp green salad and a glass of white – delicious.

 

If you prefer a vegetarian version, just leave out the bacon.
