Pink Lemonade

When I think of summer I dream of hot days spent outdoors enjoying the garden, a country walk or even a picnic on the beach. We may not be able to guarantee wall to wall sunshine during the summer months in the UK but a glass of sunshine will always put a smile on my face and what better than homemade pink lemonade.

A refreshing glass of this sweet, cool drink is a definite favourite for children and parents alike, the best think to brighten up a cloudy day or cool you down when the sun does decide to shine.

300g caster sugar
2 lemons – sliced
1 orange – sliced
500g raspberries

Place all the ingredients into a large pan and top up with 350ml cold water. Bring to the boil, stirring regularly and then allow to cool. Once cool strain through a sieve and push the fruit down to extract as much juice as possible. You should be left with a lovely pink syrup which can be stored in the fridge for up to a week. Enjoy with still or sparkling water, ice and a slice or even better top with a lovely chilled prosecco. Delicious.
